
Tomato Salsa with Almond

Ingredients
- 6 cloves garlic
- 2 tsp salt
- 2 whole red chillies de-seeded
- 100 g almonds roasted
- 4 whole tomatoes large
- 4 tbsp flat leaf parsley chopped
- 30 ml red wine vinegar
- 80 ml olive oil extra virgin
- black pepper freshly ground
Instructions
- In a large mortar and pestle, grind the garlic and chilli with half the salt6 cloves garlic, 2 whole red chillies
- Grind the almonds until thoroughly crushed100 g almonds
- Add the tomato and remaining salt and gently crush4 whole tomatoes
- Stir in the parsley and red wine vinegar4 tbsp flat leaf parsley, 30 ml red wine vinegar
- Drizzle in the olive oil and season with pepper80 ml olive oil, black pepper
