  • Food processor


  • 1 cup Flat leaf parsley fresh
  • 1 cup Basil fresh
  • 1 cup Mint
  • 2 cloves Garlic
  • 6 fillets Anchovies
  • 2 tsp Capers
  • 1 tbsp Dijon Mustard
  • ½ cup Olive oil extra virgin
  • 1 whole Lemon juiced
  • 1 pinch Salt
  • 1 grind Black Pepper


  • Put parsley, basil, mint, garlic, anchovies and capers into a food processor and process until finely chopped.
    1 cup Flat leaf parsley, 1 cup Basil, 1 cup Mint, 2 cloves Garlic, 6 fillets Anchovies, 2 tsp Capers
  • Add olive oil a little at a time until a good consistency
  • Add Lemon juice and Season with salt and pepper
  • Let rest for five to ten minutes
  • Serve with Roast lamb or Fish
