A fast and chunky tomato relish that adds a bit of zing to meat dishes, burgers and sandwiches.

Equipment

  • Medium saucepan

Ingredients
  

  • 1 whole Brown onion diced small
  • 1 tbsp Olive oil extra virgin
  • 2 tsp Garlic crushed
  • 1 whole Chilli finely chopped deseeded
  • 500 g Fresh tomatoes chopped coarsely
  • 2 tbsp Raw sugar
  • 2 tbsp Red wine vinegar

Low Carb option

  • 2 tbsp Monk Fruit Sugar

Instructions
 

  • Heat olive oil in a medium saucepan over moderate heat.
    1 tbsp Olive oil
  • Cook onion for about 5 minutes until soft.
    1 whole Brown onion diced
  • Add garlic, chilli and cook, stirring for another 2 minutes.
    2 tsp Garlic crushed, 1 whole Chilli finely chopped
  • Add tomato, stirring for another 5 minutes.
    500 g Fresh tomatoes chopped
  • Add sugar and vinegar and cook for a further 10 minutes or until thickened.
    2 tbsp Raw sugar, 2 tbsp Red wine vinegar
  • Remove from heat and allow to cool.
  • Serve with your burger, sandwich or meat dish

Low Carb Option

  • Add Monk Fruit Sugar in place of Raw Sugar
    2 tbsp Monk Fruit Sugar
