I borrowed this idea from the USA. Buffalo Wings is a classic All-American bar snack and very popular watching big sporting events on the screen. The World Series and Superbowl to name a couple. Essentially it is chicken wings baked or fried served with a sauce or dip.

I wanted to create a similar dish with an Australian accent. So, I used logical thinking and figured that Kangaroos have just as many wings as Buffalo. There it was, Kangaroo Wings. As easy as the recipe itself. Not only simple to make but a real crowd pleaser!
Ingredients
Wings
- 12 uncooked chicken wing pieces
Spice rubs
Aussie Spice Rub
Alternate Spice Rub
- 2 teaspoon Raw Sugar
- 1 tablespoon Bush Tomato (Akudjura)
- 2 teaspoon ground Native Pepperberry
- 2 teaspoon Lemon Myrtle
- 2 teaspoon Salt
- 2 teaspoon Garlic Powder
- 2 teaspoon ground Wattleseed
- 1/2 teaspoon Mustard Powder
- Pinch of Chilli Powder
- 2 teaspoon Raw Sugar
- 1 tablespoon Smoked Paprika
- 2 teaspoon ground Black Pepper
- 2 teaspoon Salt
- 2 teaspoon Garlic Powder
- 2 teaspoon Onion Powder
- 1/2 teaspoon Mustard Powder
- Pinch of Chilli Powder
Dips
Blue Cheese Dip
Teriyaki Dip
- 150g mild blue cheese like Tasmanian Heritage Classic Blue
- 1/2 cup (125g) sour cream
- 1/2 cup (125g) mayonnaise
- 2 garlic cloves, crushed
- 2 garlic cloves crushed
- 4 teaspoons olive oil
- 8 tablespoons sherry
- 8 tablespoons soy sauce
- 2 tablespoon toasted sesame seeds
- 4 tablespoons raw sugar
- 1/4 teaspoon red chilli flakes
- 4 teaspoons corn flour
- 4 tablespoons water
Instructions
1. Get the oven ready
Oven Baked
Fan Forced or Air Fryer
Preheat oven to:
- 220 C or 425 F
- Set air fryer to 200 C or 390 F.
2. Cut the wings into three pieces

- Use the tips for stock.
3. Place Wings and Spice Rub into a large bowl and mix with your wings to coat evenly.
- Mix all the ingredients together
4. Place Wings in to be cooked
Oven Baked
Air Fryer
- Spread out evenly on a metal baking tray covered with baking paper.
- Space out well.
- Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned.
- Space out well.
- Bake for about 20 minutes, turn the wings over, and cook another 5 minutes, or until the wings are cooked through and browned.
5. While the Kangaroo Wings are cooking
Blue Cheese Dip
Teriyaki Dip
- Throw all the dip ingredients into a food processor and mix until smooth (add some water if it is a bit thick)
- Throw the garlic, sherry, soy sauce, brown sugar, sesame seeds and red chilli flakes into a bowl and mix well.
- Place mixture into a small saucepan and heat.
- Mix corn flour with cold water.
- Add to the saucepan until it thickens.
6. Serve
- You can add carrot and celery sticks which also go well with the dip
