Equipment

Ingredients
  

  • 1 head Cauliflower
  • 1 cup Chicken masterstock or stock
  • 1 pinch Salt
  • 1 tbsp Olive oil extra virgin
  • 1 pinch Black Pepper freshly ground
  • 2 tbsp Olive oil extra virgin
  • 1 whole Brown Onion finely diced
  • 2 cloves Garlic minced
  • 2 tbsp Almond flour
  • 2 cups Milk
  • ½ cup Fried onions dry
  • ½ cup Cheese shredded
  • 1 tsp Smoked Paprika
  • ½ cup Flat leaf parsley chopped

Instructions
 

  • Half fill a pot with water, add stock and pinch of salt
    1 cup Chicken masterstock, 1 pinch Salt
  • Cut cauliflower into small florets
    1 head Cauliflower
  • Once the water/stock in the pot boils add the cauliflower
  • Cook for 4 to 5 minutes
  • Remove and drain cauliflower then rinse with cold water
  • Grease the casserole dish with 1 tbsp Olive Oil
    1 tbsp Olive oil
  • Add the florets in one layer, season with Black Pepper and set aside
    1 pinch Black Pepper
  • Pre heat oven to 210C
  • Heat a large fry pan to medium and add 2 tbsp Olive Oil
    2 tbsp Olive oil
  • Add Onion and Garlic, cook until soft
    1 whole Brown Onion, 2 cloves Garlic
  • Add Almond Flour and cook stirring for 3 minutes
    2 tbsp Almond flour
  • Add milk slowly while mixing to rid the mixture of lumps
    2 cups Milk
  • Season with salt and pepper
  • Pour over florets
  • Spread Fried Onions and Cheese over the top
    ½ cup Fried onions, ½ cup Cheese
  • Sprinkle Paprika over everything
    1 tsp Smoked Paprika
  • Place the dish in the oven and cook 20-25 mins until golden brown
  • Serve sprinkled with chopped parsley
    ½ cup Flat leaf parsley

Notes

You can go half and half with Broccoli for a colourful twist
