Buffalo Bites with Blue Cheese

  • 1 Barbeque or heavy based frying pan
  • 1 Meat thermometer optional


  • 200 gram buffalo water buffalo fillet
  • 100 gram blue cheese
  • 1 tsp salt
  • 1 tsp black pepper


  • Pat the buffalo fillet dry with paper towel and season with salt and pepper
    200 gram buffalo, 1 tsp salt, 1 tsp black pepper
  • On a low to medium, heat, cook the buffalo, turning regularly
  • When the buffalo fillet has reached an internal temperature of 60C or 135F (Medium), remove from the heat and rest for five minutes covered with a sheet of foil
  • Thinly slice the blue cheese to desired size (matching the size of the buffalo when sliced)
    100 gram blue cheese
  • Plate up the sliced buffalo with blue cheese slices on top
